Carbon steel beats cast iron here for quick, thin crepes: lighter and faster to respond. ## Construction cheat sheet (induction) - Fully clad tri-ply / 5-ply (All-Clad D3, Tramontina Signature, Made In): even heat, warp-resistant. Induction needs a magnetic exterior layer, so the outside ply is a ferritic grade (e.g. 430 / 18-0) with 18/10 stainless inside. - Encapsulated disc base (both ATK stockpot winners): fine for water and boiling; can hot-spot for stews. - Cast iron / carbon steel (Lodge, de Buyer, Matfer): magnetic by nature, excellent induction contact, heaviest, needs seasoning. - Oven safety: All-Clad D3 600F; Tramontina 500F; Lodge cast iron oven-safe; carbon-steel pans with coated handles are the usual trap.
